Cinnamon Loaf

What you'll need to get started:
1/4 cup sugar
2 tablespoons cinnamon
1/2 cup margarine
1/2 cup sugar
2 eggs
1 teaspoon vanilla
1 cup sour cream
2 cups flour
1 1/2 tsp. baking powder
1/2 teaspoon salt
1 teaspoon baking soda
1/4 cup milk
Here's the lowdown
- First make the cinnamon-sugar topping by mixing the sugar and cinnamon in small bowl and set aside.
- Preheat oven to 350 degrees and lightly spray a loaf pan with coating.
- Place margarine and sugar in large bowl and beat until creamy.
- Add eggs, vanilla, sour cream, and milk, and beat until well blended.
- In a separate bowl, stir together flour, baking powder, baking soda, and salt.
- Slowly add dry ingredients to the creamed mixture and beat again.
- Divide the cinnamon-sugar topping mixture into two equal parts and spoon half the batter into the loaf pan.
- Sprinkle one part of the cinnamon-sugar mixture over the batter in pan. Then, spoon the remaining batter over the cinnamon-sugar mixture.
- With a butter knife, cut through the batter and cinnamon to form swirls.
- Sprinkle the remaining cinnamon-sugar over the top of the loaf.
- Place on center rack in oven and bake for 45 minutes or until well done.
12. Wait until cool and serve with milk—yum!
