Cinnamon Loaf

What you'll need to get started:

1/4 cup sugar
2 tablespoons cinnamon
1/2 cup margarine
1/2 cup sugar
2 eggs
1 teaspoon vanilla
1 cup sour cream
2 cups flour
1 1/2 tsp. baking powder
1/2 teaspoon salt
1 teaspoon baking soda
1/4 cup milk

Here's the lowdown

  1. First make the cinnamon-sugar topping by mixing the sugar and cinnamon in small bowl and set aside.
  2. Preheat oven to 350 degrees and lightly spray a loaf pan with coating.
  3. Place margarine and sugar in large bowl and beat until creamy.
  4. Add eggs, vanilla, sour cream, and milk, and beat until well blended. 
  5. In a separate bowl, stir together flour, baking powder, baking soda, and salt.
  6. Slowly add dry ingredients to the creamed mixture and beat again.
  7. Divide the cinnamon-sugar topping mixture into two equal parts and spoon half the batter into the loaf pan.
  8. Sprinkle one part of the cinnamon-sugar mixture over the batter in pan. Then, spoon the remaining batter over the cinnamon-sugar mixture.
  9. With a butter knife, cut through the batter and cinnamon to form swirls.
  10. Sprinkle the remaining cinnamon-sugar over the top of the loaf.
  11. Place on center rack in oven and bake for 45 minutes or until well done.

12. Wait until cool and serve with milk—yum!
